Ingredients:

  • 3 cups of long-grain parboiled rice
  • 4 large tomatoes, blended
  • 2 red bell peppers, blended
  • 1 scotch bonnet pepper, blended
  • 1 large onion (divided in half)
  • 2 cloves of garlic, minced
  • 1 tablespoon of tomato paste
  • 2 teaspoons of curry powder
  • 1 teaspoon of thyme
  • 3 bay leaves
  • 4 cups of chicken broth
  • 1/2 cup of vegetable oil
  • Salt to taste

Instructions:

  1. Heat oil in a large pot, and sauté half of the chopped onion until soft.
  2. Add minced garlic, tomato paste, and blended tomato mixture. Fry until the oil separates from the sauce.
  3. Stir in the curry powder, thyme, bay leaves, and salt. Let it simmer for about 10 minutes.
  4. Add the chicken broth, bring the mixture to a boil, and then stir in the washed rice.
  5. Reduce heat to low, cover the pot with aluminum foil, then place the lid on to trap the steam.
  6. Let the rice cook for about 30–35 minutes, stirring occasionally to prevent burning.
  7. Once the rice is cooked and fluffy, stir in the remaining chopped onions, adjust seasoning, and allow it to steam for an additional 5 minutes.

  • 2 cups of ground melon seeds (egusi)
  • 1 bunch of spinach or bitter leaf
  • 1 cup of palm oil
  • 1 large onion
  • 2 tablespoons of ground crayfish
  • 2 scotch bonnets, chopped
  • 500g assorted meat (beef, goat, or tripe)
  • 500g stockfish (optional)
  • 1 teaspoon of ground pepper
  • Salt to taste

Instructions for Pounded Yam:

  1. Peel the yams and cut them into small chunks. Boil until soft.
  2. Pound the cooked yam in a mortar until smooth and stretchy. Alternatively, use yam flour mixed with hot water to make pounded yam.

Instructions for Egusi Soup:

  1. Heat palm oil in a pot and sauté the onions and scotch bonnets.
  2. Add the ground melon seeds and fry gently for about 10 minutes.
  3. Add the meat, stockfish (if using), ground crayfish, and pepper. Stir well and allow to simmer for another 10 minutes.
